Sweet Tater Hash

I saw this on pinterest (original recipe) and thought I’d give it a try! Here’s how I made mine.

  • 1 serving
  • 1/2 sweet potato
  • 1 clove garlic (crushed)
  • olive or coconut oil
  • salt and pepper
  • 1 egg
  • optional: other veggies like carrots, leeks, peppers, onions, etc;  left over meat
CAST IRON SKILLET
Pre heat oven to 350 F

Grate the raw sweet potato using a cheese grater or food processor; I hand grated mine and it was easier than I expected. Heat the oil and garlic and any seasonings you wish to use in the cast iron skillet on the stove at medium high heat. Add the grated sweet potato and cook until tender and a little brown. turn off the stove and shape the hash into a mound and make a divot in the center for the egg. Crack the egg into the volcano pit of sweet potatoes, (add any leftover meat around the pile at this point) and pop in the oven until the egg is done to your liking; mine was about 15 minutes.
